Happy Memorial Day Weekend (and a simple potato salad recipe)

Happy Memorial Day to all of you, and special thanks to all those who have served and sacrificed for our freedom. 





Simple potato salad recipe

I'm a pretty no-frills cook, so feel free to add your choice of other ingredients (e.g. celery, onions, bacon, etc.)


Boil eggs (Bring the eggs to a boil, allow them to boil for 5 minutes, then turn the heat off and cover the pot. Wait 10 minutes, then rinse hot water out and add a few ice cubes. After a few minutes, peel)

Wash potatoes (and yes, I rinse the dirt off, then soap up the potatoes, wait 1 minute, then rinse well and scrub). Poke holes in several places on each potato. Cook. (Because I always worry that I haven't boiled them long enough, I microwave them instead. I cook in 4-minute increments, turning the potato between each cycle. Once they're soft to the touch, allow them to cool, then cut into cubes (size according to preference).


Cut up several small sweet pickles. 

Cut up 2 eggs (I use an egg slicer, so I end up with small cubes of egg).


Put everything in a bowl, add salt (and other spices if preferred), mustard, mayonnaise, and sweet pickle juice. Mix well. Quantities are based on your tastebuds. I use lots of mayo, a small amount of mustard, and the pickle juice to make things a little smoother.
